A classic tea time staple across the globe that dates back to 9th century Italy, macaroons are basically a small biscuit or cookie that was traditionally made from ground up almonds. Nowadays, there are innumerable different recipes for macaroons that include other types of nuts, coconut, and sometimes candied fruits, jam and/or a chocolate coating. These little treats are perfect for infusing with cannabutter made from your favorite strain via the below recipe!
1 and 1/3 cups coconut flakes
2 tablespoons of cannabutter
Baking chocolate of your choice
1/3rd cup of sugar
2 tablespoons of flour
A pinch of salt
2 egg whites
Vanilla extract
Chopped nuts of your choice (almonds, hazel nuts, etc.)
Process:
First you’ll want to preheat your oven to bake at 325°F and then apply grease or cooking spray to a cookie sheet/tray. Now take the coconut, flower, sugar, and salt, mix them all together in a bowl using your hands to mix as much as possible and making sure to break up any clumps that may have formed. Next crack the eggs and carefully separate the whites from the yolks and pour them in another bowl along with half a teaspoon of the vanilla extract. Whip up the egg white and vanilla extract mix as fast as you possibly can by hand with a whisk, or better yet with an electric mixer, until a frothy mixture is formed. When fully mixed, add it to the bowl containing the flour and coconut mixture mixing with a wooden spoon. Once your mix is done use a spoon to scoop approximately one tablespoon of the mix per macaroon onto the cookie sheet. Then place the tray in the oven for about 17 minutes or until the macaroons reach a delicious looking golden brown color.
When the macaroons are done cooking remove them from the oven and let them cool for at least 5-10 minutes on a rack or tray. Once the macaroons have finished cooling you can begin dipping them in your marijuana infused chocolate sauce, double dipping if you are looking for a stronger overall effect. After being dipped you can add the chopped nuts you picked out to top them off. You should now have yourself about a dozen tasty marijuana macaroons for you and your fellow cannabis enthusiasts to enjoy as a snack or dessert!
